taco 'bout simple lentil tacos

Ingredients

Lentils

  • 1 tsp olive oil
  • 1 onion sliced
  • 3 garlic cloves minced
  • 1 tsp cumin
  • 1 tsp chilli powder
  • 1 tsp garlic powder
  • 1 tsp soy sauce
  • 1 cup green or brown lentils, dry
  • 2 cups water

Toppings

  • 12 small corn tortillas
  • 20 cherry tomatoes quartered
  • 1 avocado
  • 1 stock green onion
  • 2 oz cheddar cheese grated - optional if you have high cholesterol
  • cilantro
  • hot sauce we like valentina

Instructions

  • add the oil, onion, garlic and spices to the instant pot on sautee - or to a large pot on the stove and sautee until the onion is soft
  • add the lentils and water, and pressure cook on high for 12 minutes, quick release when finished - or bring to a boil and cook until soft (approx. 20 minutes)
  • while the lentils cook, prepare the vegetables
  • be sure to heat the corn tortillas on the stove or in the microwave until soft to allow them to bend properly
