Ingredients

  • 170 grams orzo
  • 1 can chickpeas or 1 cup dry chickpeas cooked, drained and rinsed
  • 20 cherry tomatoes halved
  • 1/2 cucumber diced
  • 1 bell pepper diced
  • 2 avocados diced
  • 15 kalamata olives sliced
  • 200 grams feta cheese crumbled
  • 1/4 cup red onion minced
  • 1/3 cup red wine vinegar
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tbsp dried basil

Instructions

  • boil a pot of water and cook the orzo following the box directions
  • add all remaining ingredients to a large bowl
  • when the pasta is finished cooking, drain the water and rinse with cold water to cook the pasta before adding to the large bowl
  • stir all ingredients together and enjoy
