lemon poppyseed muffins - refined sugar free
These lemon poppy seed muffins are a staple snack in our home. They use honey instead of sugar, olive oil instead of butter, and whole wheat flour to increase fibre.

Dry ingredients
- 1.5 cups whole wheat flour
- 1.5 tsp baking powder
- 0.5 tsp baking soda
- 0.5 tsp salt
- 2 tbsp poppy seeds
Wet ingredients
- 2 eggs
- 1 lemon for zest and juice
- 0.5 cup honey melted
- 0.5 cup plain greek yogurt
- 0.25 cup olive oil

preheat over to 400F
in a large bowl, add all dry ingredients and mix to combine
create a well in the dry ingredients and add the eggs and whisk with a fork in the well, then add the remaining wet ingredients. Be sure to zest the lemon before cutting in in half to juice it.
mix the wet and dry ingredients until well combeined
grease a regular 12 cavity muffin tin and evenly distribute batter into the cavities
bake for 12 minutes or until slightly browned
