greens, eggs, no ham

Ingredients

  • 1 tsp olive oil
  • 2 eggs
  • 3 leaves Swiss chard chopped
  • 1/4 tsp garlic powder
  • 1/4 tsp salt omit if high blood pressure
  • 1 tsp apple cider vinegar
  • 1/2 avocado thinly sliced

Optional toppings: cherry tomatoes, cilantro, green onion, hot sauce

Instructions

  • in a fry pan, heat half the oil over medium heat and add the eggs, half of the salt and half of the garlic powder on top and then cook as desired
  • in a second fry pan or the other side of the same pan, add the remaining oil and add the Swiss chard steams first, allow to soften for about 2 minutes before adding the chopped leaves. Top with the remaining salt, garlic powder, apple cider vinegar and cook until the leaves are wilted
  • plate with optional toppings
