easy bake blueberry muffins

Ingredients

  • 1.5 cup whole wheat flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon

Wet ingredients

  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup maple syrup
  • 1/2 cup yogurt
  • 1/4 cup olive oil
  • 1 cup blueberries

Instructions

  • preheat the oven to 400F
  • in a large bowl, stir to combine the dry ingredients
  • make a well in the centre of the dry ingredients and crack the eggs into the well, whisk in the center
  • add the remaining wet ingredients and stir until well combined
  • grease or line a 12 cavity muffin tin and divided the batter equally into the cavities
  • bake for 10-12 minutes or until tops have slightly browned
