crunchy chunky granola

Ingredients

  • 1.5 cups whole rolled oats
  • 1 cup nuts of choice broken or cut into small pieces (I like to use pecans and walnuts)
  • 1/2 cup coconut smiles or shredded
  • 1/4 cup pumpkin seeds
  • 1/4 cup quinoa, chia or flax seeds uncooked, optional for crunch
  • 1/4 cup honey or maple syrup
  • 3 tbsp nut butter of choice
  • 1 tsp cinnamon

Instructions

  • preheat oven to 325F
  • in a large bowl, combine all ingredients and mix until well combined, you may want to squish together with your hands 
  • line a baking sheet with  parchment paper and spread the mixture on top
  • for chunky granola bake for 20 minutes or until slightly browned and leave without touching to cool completely on the the baking tray after cooking
  • for loose granola toss the ingredients half way and again at the end of the 20 minute cook time
