BBQ chicken tortilla pizza
Another dinner built for leftover chicken, but bulk cooking the chicken first is an option as well!

- 2 chicken breasts or 4 chicken thighs
- 4 whole wheat tortillas, medium or naan, roti, flatbread, etc.
- sugar free BBQ sauce we like Good Food for Good brand
- 8-10 cherry tomatoes halved
- 5 mushrooms sliced thin
- 1 green onion sliced thin
- 2 oz cheddar cheese

cook the chicken first if not using leftovers, for breaks bake for 20-25 minutes at 400F or until 165F internal temperature. Slice into small pieces to prepare for the pizzas
preheat oven to 400F if it isn’t already from the chicken cooking
line a baking sheet with parchment paper and lay down the tortilla or roti, add BBQ sauce and spread to cover, add the chicken pieces, tomatoes, mushrooms, green onion and then grate cheese directly on top
bake for 8-12 minutes, until crust is slightly browned and cheese is melted
