Sheet pan chicken dinner, simple and versitle to be suited for other vegetables as well! With a unique flavour profile for both the sweet potato and Brussel's sprouts.

Ingredients
- 2 tbsp olive oil
- 2 chicken breasts
- 2 sweet potatoes cut into bite sized pieces
- 1 bag brussel's sprouts
- 1 tsp salt omit if high blood pressure
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp cinnamon
- 1 tsp maple syrup optional
- 1 tsp balsamic vinegar optional
Instructions
- preheat the oven to 400F
- line 2 baking pans with parchment paper, tin foil or oil
- cut the sweet potato into bite sized cubes, put on one of the baking pans and top with a drizzle of oil, salt, garlic powder, onion powder, and maple syrup and add to the preheated oven and set a 15 minute timer
- halve the brussel’s sprouts and add to second baking sheet and top with salt, garlic powder and onion powder
- to the baking sheet with the brussel’s sprouts, add the chicken breasts and top with salt, garlic, onion and paprika
- when the 15 minute timer goes off, flip the sweet potatoes and add the second baking pan to the oven for 18-20 minutes until the chicken reaches 650F internal temperature
- removal all from the oven and enjoy
