Ingredients
- 1 tsp olive oil
- 1 yellow onion thinly chopped
- 3 cloves garlic minced
- 2 carrots chopped
- 2 sweet potatoes chopped
- 1 can diced tomatoes
- 1 cup pearl barley
- 1 cup green/brown lentils
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1 tsp salt omit if high blood pressure
- 6 cups broth
- 1 large handful kale or spinach fresh or frozen
- 1 cup green peas or edamame fresh or frozen
Instructions
- on the stove, in a large pot, sautee onion and garlic in oil until soft. Then add remaining ingredients and simmer until all ingredients are softened, approximately 20-30 minutes
- in an instant pot, start by adding oil, onion and garlic to saute until soft. Then add all remaining ingredients in the order listed and don’t stir, then pressure cook on high for 10 minutes, release pressure valve when cook time elapses and enjoy
