Ingredients
- 150 grams rice vermicelli or 1 cup brown rice
- 2 blocks extra firm tofu crumbled into bite sized pieces
- 1 head broccoli chopped
- 1 sweet bell pepper chopped
- 2 carrots chopped
Sauce
- 1/4 cup maple syrup
- 1/4 cup soy sauce
- 1/4 cup sesame seeds
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
- 1/2 tsp sriracha
- 3 cloves garlic minced
- 1.5 tbsp corn starch or arrow root powder
Instructions
- bring a large pot of water to a boil for the noodles (or rice), when the water is boiling, add the noodles and cook according to package instructions
- if using an oven, preheat to 425F. Crumble the tofu onto a parchment paper lined baking sheet and back for 10-12 minutes. If using an air fryer, preheat to 400F and bake on your air frying basket for 10 minutes
- add the chopped vegetables to a large frying pan with a little water in the bottom to steam until all vegetables are soft
- in a small bowl, whisk together all sauce ingredients
- when the vegetables are soft and tofu is finished cooking, add the tofu and sauce to the large pan, turn the heat to medium high very briefly and stir while the sauce thickens
- remove the large pan from the heat and place the vegetable and tofu mixture onto the vermicelli noodles or rice and enjoy
