no cook spring rolls

ingredients

  •  6 rice papers
  • 1 black extra firm smoked tofu, cut into sticks
  • 2 medium carrots, cut into thin sticks
  • 1/2 cucumber, cut into thin sticks
  • 1 cup red cabbage, radicchio or bell pepper, thinly sliced 
  • Fresh cilantro, mint or Thai basil
 
Sauce Ingredients: 
  • 8 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar (optional)
  • 6 tbsp water or more
  • 1/2 tsp sriracha (optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp fish sauce (optional)

instructions

  1.  dip a single rice paper into a shallow bowl of warm water, then lay it flat on a clean cutting board and top with 1/6 of each vegetable and tofu 
  2. wait until the rice paper is translucent, very soft and slightly sticking, about 2-4 minutes, and then roll ingredients closed into wrap
  3. Repeat for the remaining rice papers
  4. Add all sauce ingredients into a small bowl and whisk until smooth, this might take longer than you expect but eventually it becomes smooth
  5. Enjoy the spring rolls dipped in the peanut sauce
