Ingredients
- 170 grams orzo
- 1 can chickpeas or 1 cup dry chickpeas cooked, drained and rinsed
- 20 cherry tomatoes halved
- 1/2 cucumber diced
- 1 bell pepper diced
- 2 avocados diced
- 15 kalamata olives sliced
- 200 grams feta cheese crumbled
- 1/4 cup red onion minced
- 1/3 cup red wine vinegar
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1 tbsp dried basil
Instructions
- boil a pot of water and cook the orzo following the box directions
- add all remaining ingredients to a large bowl
- when the pasta is finished cooking, drain the water and rinse with cold water to cook the pasta before adding to the large bowl
- stir all ingredients together and enjoy
