These lemon poppy seed muffins are a staple snack in our home. They use honey instead of sugar, olive oil instead of butter, and whole wheat flour to increase fibre.

Ingredients
Dry ingredients
- 1.5 cups whole wheat flour
- 1.5 tsp baking powder
- 0.5 tsp baking soda
- 0.5 tsp salt
- 2 tbsp poppy seeds
Wet ingredients
- 2 eggs
- 1 lemon for zest and juice
- 0.5 cup honey melted
- 0.5 cup plain greek yogurt
- 0.25 cup olive oil
Instructions
- preheat over to 400F
- in a large bowl, add all dry ingredients and mix to combine
- create a well in the dry ingredients and add the eggs and whisk with a fork in the well, then add the remaining wet ingredients. Be sure to zest the lemon before cutting in in half to juice it.
- mix the wet and dry ingredients until well combeined
- grease a regular 12 cavity muffin tin and evenly distribute batter into the cavities
- bake for 12 minutes or until slightly browned
