Ingredients
- 1 tsp olive oil
- 2 eggs
- 3 leaves Swiss chard chopped
- 1/4 tsp garlic powder
- 1/4 tsp salt omit if high blood pressure
- 1 tsp apple cider vinegar
- 1/2 avocado thinly sliced
Optional toppings: cherry tomatoes, cilantro, green onion, hot sauce
Instructions
- in a fry pan, heat half the oil over medium heat and add the eggs, half of the salt and half of the garlic powder on top and then cook as desired
- in a second fry pan or the other side of the same pan, add the remaining oil and add the Swiss chard steams first, allow to soften for about 2 minutes before adding the chopped leaves. Top with the remaining salt, garlic powder, apple cider vinegar and cook until the leaves are wilted
- plate with optional toppings
