
dreamy creamy broccoli soup

ingredients
- 1 medium onion, diced
- 2 medium carrots, diced
- 1 medium head broccoli, chopped
- 2 cups low sodium vegetable stock
- 1 cup raw cashews, soaked in water
- 1/2 block extra firm tofu
- 1/4 cup nutrition yeast
- 1 tsp salt (omit if high blood pressure)
- 1 tsp garlic powder
- 1 tsp onion powder
instructions
- heat olive oil in a large sauce pan and saute onion until soft
- add the broccoli, carrot and 1/2 cup of broth to the pan and cover over medium heat to steam the vegeables until soft
- to a large blender (at least 8 cup capacity) add the remaining ingredients and blend until smooth
- if you prefer a chunkier consistency, blend all ingredients except the vegetables in the sauce pan until smooth and then add the vegetables and pulse blend
