I tend to make this meal as a very quick lunch or dinner when I have left over chicken breast available because the remaining steps are very easy. Goes especially good with the blackened chicken recipe! if you don't have leftover chicken and still want a quick meal, I love this one with chopped raw smoked tofu, but I know raw tofu isn't for everyone!

Ingredients
- 2 chicken breasts diced
- 4 whole wheat tortillas, large
- 1 head lettuce chopped
- 20 cherry tomatoes halved
Caesar salad dressing https://mellowellhealth.com/easy-caesar-salad-dressing/
- 1/2 cup mayonnaise
- 1/2 cup plain greek yogurt
- 2 tbsp white vinegar
- 2 tsp garlic powder or 2 garlic cloves, pressed
Instructions
- preheat the oven to 425F
- add the chicken to a baking tray with tin foil or parchment paper and bake for 18-20 minutes or until internal temperature reaches 165F
- prepare the dressing in a sealable jar or container to be kept in the fridge if necessary by adding all ingredients and stirring to combine
- prepare the lettuce and tomato, add to the tortilla and drizzle a quarter of the caesar dressing on top
- when the chicken is ready, dice into bite sized pieces and add to the tortilla and enjoy
