Ingredients
- 1.5 cups whole rolled oats
- 1 cup nuts of choice broken or cut into small pieces (I like to use pecans and walnuts)
- 1/2 cup coconut smiles or shredded
- 1/4 cup pumpkin seeds
- 1/4 cup quinoa, chia or flax seeds uncooked, optional for crunch
- 1/4 cup honey or maple syrup
- 3 tbsp nut butter of choice
- 1 tsp cinnamon
Instructions
- preheat oven to 325F
- in a large bowl, combine all ingredients and mix until well combined, you may want to squish together with your hands
- line a baking sheet with parchment paper and spread the mixture on top
- for chunky granola bake for 20 minutes or until slightly browned and leave without touching to cool completely on the the baking tray after cooking
- for loose granola toss the ingredients half way and again at the end of the 20 minute cook time
