dreamy creamy broccoli soup

ingredients

  •  1 medium onion, diced
  • 2 medium carrots, diced
  • 1 medium head broccoli, chopped
  • 2 cups low sodium vegetable stock
  • 1 cup raw cashews, soaked in water 
  • 1/2 block extra firm tofu
  • 1/4 cup nutrition yeast
  • 1 tsp salt (omit if high blood pressure)
  • 1 tsp garlic powder
  • 1 tsp onion powder

instructions

  1. heat olive oil in a large sauce pan and saute onion until soft
  2. add the broccoli, carrot and 1/2 cup of broth to the pan and cover over medium heat to steam the vegeables until soft
  3. to a large blender (at least 8 cup capacity) add the remaining ingredients and blend until smooth
  4. if you prefer a chunkier consistency, blend all ingredients except the vegetables in the sauce pan until smooth and then add the vegetables and pulse blend
