
no cook spring rolls

ingredients
- 6 rice papers
- 1 black extra firm smoked tofu, cut into sticks
- 2 medium carrots, cut into thin sticks
- 1/2 cucumber, cut into thin sticks
- 1 cup red cabbage, radicchio or bell pepper, thinly sliced
- Fresh cilantro, mint or Thai basil
Sauce Ingredients:
- 8 tbsp peanut butter
- 2 tbsp soy sauce
- 1 tbsp rice vinegar (optional)
- 6 tbsp water or more
- 1/2 tsp sriracha (optional)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp fish sauce (optional)
instructions
- dip a single rice paper into a shallow bowl of warm water, then lay it flat on a clean cutting board and top with 1/6 of each vegetable and tofu
- wait until the rice paper is translucent, very soft and slightly sticking, about 2-4 minutes, and then roll ingredients closed into wrap
- Repeat for the remaining rice papers
- Add all sauce ingredients into a small bowl and whisk until smooth, this might take longer than you expect but eventually it becomes smooth
- Enjoy the spring rolls dipped in the peanut sauce
