simple kale chicken salad

This recipe is especially one I throw together for lunch when I have leftover starch and protein from dinner the night before but want to switch it up. BUT, here is a full recipe to make it all start to finish.

Ingredients

  • 1 tbsp olive oil
  • 2 chicken breasts
  • 2 sweet potato diced
  • 1 bunch kale or salad greens
  • 10 cherry tomatoes
  • 1/2 cucumber diced
  • 1 tsp salt omit if high blood pressure
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cinnamon
  • 1/4 tsp paprika
  • 1/2 cup garlic hummus OR tahini dressing

Instructions

  • preheat oven to 425F
  • add the sweet potato to a lined baking pan, toss in 1/2 tbsp olive oil and top with half of the spice mixture and put in oven when preheated. Start a timer for 12 minutes
  • when the 12 minute timer has elapsed, flip the sweet potato move to one side of the baking tray and add the chicken to the tray and top the chicken with the remaining oil and spice mix
  • return the tray to the oven for 18 minutes
  • add the kale, tomatoes, cucumber and hummus or tahini dressing to bowl
  • ensure the chicken reaches 165F internal temperature, cut the chicken breasts into bite sized pieces and add to your salad along with half the sweet potato per bowl
