Ingredients
Lentils
- 1 tsp olive oil
- 1 onion sliced
- 3 garlic cloves minced
- 1 tsp cumin
- 1 tsp chilli powder
- 1 tsp garlic powder
- 1 tsp soy sauce
- 1 cup green or brown lentils, dry
- 2 cups water
Toppings
- 12 small corn tortillas
- 20 cherry tomatoes quartered
- 1 avocado
- 1 stock green onion
- 2 oz cheddar cheese grated - optional if you have high cholesterol
- cilantro
- hot sauce we like valentina
Instructions
- add the oil, onion, garlic and spices to the instant pot on sautee - or to a large pot on the stove and sautee until the onion is soft
- add the lentils and water, and pressure cook on high for 12 minutes, quick release when finished - or bring to a boil and cook until soft (approx. 20 minutes)
- while the lentils cook, prepare the vegetables
- be sure to heat the corn tortillas on the stove or in the microwave until soft to allow them to bend properly
