These muffins were originally meant to be called Maple Cinnamon Muffins, but Scott immediately called them a waffle muffin, so here we are with the confusing name of waffle muffins. Made free of refined sugar, with added protein from the cottage cheese and full of a warm maple cinnamon flavour.

Ingredients
Dry ingredients
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1.5 tsp cinnamon
- 0.5 tsp salt
Wet ingredients
- 2 eggs
- 3/4 cup cottage cheese
- 1/4 cup olive oil
- 1/3 cup maple syrup
- 1 tsp vanilla extract
Instructions
- preheat the oven to 350F and line or oil a 12 cup muffin tin
- in a large bowl, add the dry ingredients and stir until well to combine
- make a well in the centre of the dry ingredients, crack the eggs into this well and beat them well with a fork
- then add the remaining wet ingredients to the well and stir to combine with the dry ingredients
- divide the batter evenly among the 12 muffin tin cups and bake for 20-25 minutes, until the edges have slightly browned
